This is stir-fried pork the Korean way — bold, juicy, and glossy with just the right amount of heat.

🏡 Intro
It’s not the traditional gochujang bulgogi.
This version is soy-based, sweet with corn syrup, and spicy enough to wake you up —
but not so hot the kids run away.
We didn’t slice the pork ourselves — we just bought it that way.
Sliced, ready, and begging to be cooked.
We laid it straight into a hot pan, built the sauce right there,
and let the soy glaze turn smoky and sticky.
Toss in garlic, chilies, and a heap of vegetables —
and suddenly, it’s somewhere between a weekday dinner and a party dish.
It’s a little sweet. A little spicy.
And before you know it — it’s gone.
📋 Ingredients (Serves 3-4)
✅ Sliced pork shoulder – 500g
✅ Olive oil – 1 tbsp
✅ Corn syrup – 6 tbsp
✅ Allulose – 1 tbsp
✅ Soy sauce – 6 tbsp
✅ Oyster sauce – 2 tbsp
✅ Korean chili powder – 5 tbsp
✅ Cheongyang chili powder – 1 tbsp
✅ Vinegar – ½ tbsp
✅ Sesame oil – 1 tbsp
🧑🍳 Instructions
1️⃣ Cut pork slices into smaller bite-sized pieces.
2️⃣ Prepare onion, green chili, and green onions — slice as needed.
3️⃣ Heat a pan with olive oil and lay each pork slice flat.
Cook over high heat until browned and lightly seared (about 15 minutes).
4️⃣ Push pork to one side of the pan.
Add corn syrup and allulose to the empty side and let it bubble like syrup.
5️⃣ Pour in soy sauce and reduce until slightly charred — this gives you that smoky flavor.
6️⃣ Mix the pork into the glaze. Add oyster sauce and stir.
7️⃣ Add garlic and stir well.
8️⃣ Toss in the vegetables and both chili powders.
9️⃣ Stir-fry everything over medium heat for 10 more minutes.
🔟 Finish with vinegar and sesame oil. Serve hot.
💡 Tips
🔹 Pork shoulder doesn’t have much fat — olive oil helps sear and keep it juicy.
🔹 Don’t skip the syrup + soy sauce glaze step. That’s where the smoky magic happens.
🔹 If you love heat, double the Cheongyang chili powder.
🔹 Best with rice or ssam (lettuce wraps)!
